Ingredients
Brinjals - 4 Stems trimmed, each slit lengthwise into 4 pieces joined together at the stem
Cloves - 3
Pepper - 4
Chilli Powder - 1 tsp
Dhania or Coriander seeds - 2 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1 tsp
Tamarind Pulp - 1/4 cup
Sugar - 1 tsp
Salt - to taste
Potatoes - 3 potatoes, Cut (lengthwise) into 4 pieces
Onions - 2 medium (Sliced)
Onions - 2 medium (Chopped finely)
Grated Coconut - 3 tbsp
Coriander leaves for garnish

Preparation
Heat 1 tbsp oil and add cloves, peppercorns, coriander seeds. Fry till it becomes light brown. Add sliced onion. Fry till it becomes golden brown. Add coconut. Fry till it becomes light brown. Grind the mixture to a fine paste.
To this paste, add all powders, tamarind pulp, chopped onion, sugar and salt. Stuff this mixture into the brinjal's and mix the potatoes with the remaining mixture.
Heat 3 tbsp oil in a pressure pan. Arrange brinjals and potatoes around, add 3/4 cup of water and cook under pressure for 10 minutes. (I used a pressure cooker. Added the weight once it started steaming. After adding weight, kept the gas in low flame.)
Garnish with coriander leaves.
Stuffed Brinjal is ready and Yummy!!!
